Garden Herb Vinaigrette
At Urban Oak Restaurant, our Garden Herb Vinaigrette is a fresh, bright blend of champagne vinegar, honey, and Dijon mustard, balanced with a touch of sugar and salt. Minced shallots and a mix of parsley and chives bring a burst of garden flavor, while a mix of neutral and extra virgin olive oils gives it a smooth, silky finish. Light and herbaceous, it adds a crisp, refreshing touch to any salad.
Garden Herb Vinaigrette
Yield: 1qt
Champagne Vinegar 240g
Dijon Mustard 60g
Honey 120g
Salt 6g
Neutral Oil 450g
Extra Virgin Olive Oil 220g
Shallot, Minced 100g
Sugar 16g
Parsley 1 bunch
Chives 50g
Add all ingredients to a blender and blend until smooth. Use immediately or chill and store in the refrigerator.
